I Love the Holidays!


Everyone always wants a lot of baked goods around Christmas. One of my coworkers ordered 2 dozen muffins, chocolate and zucchini, mmm! I also made some mini loafs.
I was thinking chocolate zucchini would be delicious as well! I've had zucchini brownies in the past and they were super! I'll definitely be making both soon.

Happy Holidays

Thanksgiving and Christmas are easily my favorite holidays. As Thanksgiving approaches I get antsy to start cooking and baking. This year was the smallest family gathering I had to cook/bake for, just me and my parents. I can count on the fact that we all love dessert, however, I had forgotten that my dad will not eat stuffing and I made way too much. More leftovers for me :)



My stuffing is super easy; celery, onions, carrots, bread cubes, vegetable broth, black pepper as well as parsely and some seasonings.


I made tofurkey as usual. My mom was in charge of mashed potatoes, rolls, yams and vegetables. I also brought zucchini bread and pumpkin pie. All set! After working in the morning I headed to their house. We ate almost as soon as I got there as we were all pretty darn hungry. Everything was fantastic. Now, I have NEVER eaten pumpkin pie, vegan or not, so this was my first year making and eating it.....I LOVED it!!! I'm making another very soon :)

I also baked a lot for other people. Of these things included chocolate banana bread, zucchini bread, chocolate chip cookies, peanut butter swirl brownies and a pumpkin roll!! I had never even heard of a pumpkin roll but wow, very delicious. I will make another soon and post pictures and a recipe.
