Happy Birthday Dad


This has been a trying year for my family. Birthdays haven't really been the same. My dad did ask for a chocolatey chocolate cake though, so that's what I made him! I put a thick layer of chocolate frosting in between the layers of cake. I topped it off white white and blue crystal sprinkles. This cake was yuuummy! Side this with a scoop of vanilla soy ice cream and you're basically in heaven.

Chocolate Chip Banana Bread


Another bread request was made, banana bread with chocolate chips. I used my regular banana bread recipe and added half a bag of vegan chocolate chips. Turned out fantastic!!! Warming a slice in the microwave is highly recommended ;)
I'm selling all bread for $5 or 2 for $8. You can get them in muffin form as well to help limit your servings.

Vegan Lasagna!!



We had a potluck at work so I decided to bring a main dish, lasagna. This was my first time making lasagna, ever. It was quite the process, but totally worth it!!! The only thing that really took time was preparing the veggies. Once everything is mixed and you layer the goods it takes about 45 minutes in the oven.

To make this very cheesy-like I used cream cheese, nutritional yeast, tofu and mozzarella cheese. It turned out amazing! I used added oregano, itialian seasoning, fresh parsley, lemon juice, veggie broth and a bit of nutmeg. I intended to add pepper and more nutmeg but totally spaced it. Veggies used included carrots, zucchini and spinach. Can't say I'd change much about this recipe. I had thought about adding some vegan meat crumble but it really didn't need it.

The other vegan and 4 nonvegans dug it :)

Zucchini Muffins


So I had a request for zucchini bread. I've never had zucchini bread but thought I'd give it a whirl. It took almost 3 zucchinis total. The longest part of the process was grating the zucchini. I also added some cinnamon. The resulsts were fantastic! The customer said it tasted way better than the zucchini bread at Trader Joes and was bigger than their loaves! That's what I like to hear.

I had some leftover batter so I made up some muffins. I previously made chocolate zucchini muffins which are sooo delightful!! Here is how the regular muffins turned out. The lumps are walnuts :)

With cupcakes I notice I usually spray the paper muffin cups to prevent any sticking. I forgot to do this with the zucchini muffins and was worried. However, there was no sticking! Loaves are currntly selling for $5 or two for $8.
