Ladies Night #4

For our fourth ladies night the gals and I got together to make baked potatoes. I brought some mock bacon to crumble on top, Tara had some vegan spread ready to go and we all threw on some salt and pepper.
For dessert I brought some chocolate covered pretzels, Tara had some pineapple cupcakes ready to go and then also made some PB cupcakes. She got the recipes from the book 'Vegan Cupcakes Take Over the World.' Delicious!

We played some rowdy yahtzee. Tara and I got some low scores, Ana won for the second week in a row. She must be stopped.

Hire Me For Your Party

Saturday night a friend of mine hosted a vegan potluck. She thought it would be a good idea to have a bunch of desserts that everyone would be able to eat, so she asked me to bake a bunch of goodies. Of course I was interested!

I put together a variety of treats that seem to be the favorites among people or the most commonly bought items. I also wanted easy to eat treats or things people could take home if they wanted to. Together we decided on cinnamon rolls, chocolate chip cookies, sugar cookies in the shapes of elephants, chocolate covered pretzels and brownies with chocolate frosting. I left some of the brownies without frosting as well for those who aren't chocolate maniacs.

The desserts went quick, and as suspected the cinnamon rolls cleared out first. Everything was a success and people were happy. The different dinners that people brought were also delicous! There was such a variety available. Plus it was nice to be able to eat anything and know that there weren't going to be any animal products in anything. Yum!

Cheesecake Madness

I never tried cheesecake before I was vegan, however, once I made one and tried it I understood the love of the cheesecake.

Last week I made two. One that was peanut butter with chocolate swirl and the other raspberry. It's super easy to make vegan cheesecake. My main ingredients include tofu, soy yogurt, and some tofutti cream cheese. I add soy milk, sugar, powdered sugar and a few other ingredients depending on the type of cheesecake. The 'batter' is deeeelicious.

I have to say I ate most of the PB choc swirl cheesecake. The raspberry one was for Amy, she definitely enjoyed hers as well!

Chocolate Covered Pretzels

Saturday night I will be making dessert for a party of about 55 people. I've been asked to make a variety of treats. Something new I thought I'd throw out there is chocolate covered pretzels. Though time consuming the recipe makes a bunch and they are quite yummy!

I just melt butter, pour it over chocolate chips, stir it around a bit while the chips melt, heat up the mix a little so that it is creamy. I then brush the chocolate onto the pretzels being sure to cover them then let them dry on some wax paper. I put them in the fridge to help harden them up.

I drizzled some white icing on about half of the batch. Just be careful, they get melty quick!

Happy Vegan Valentines Day

For valentines day I thought I'd bake something sweet. I let the dough rise for a little over and hour, roll it out and spread the melted 'butter' on, then sprinkle the sugar/cinnamon mix. Once all rolled up like a snake I cut out 12 pieces, pop em in the oven for 15 minutes and wahlah! The icing takes less than a minute to whip together. I went ahead and ate one myself.

Ladies Night #3

So the gals and I have been really good about having a ladies night every week. This nights ALWAYS includes good vegan food, yahtzee, and tons of gabbing. I dont' see how I ever functioned without these nights.

Last night we made pizza. MMMM

I'm a plain jane when it comes to pizza. I just like some vegan cheese and fake sausage or pepperoni, maybe some green pepper. Last night I had no cheese and green pepper while the other ladies threw on some mushrooms, red peppers, and cheese for the nonvegans. Everything looked and smelled lovely.

We of course had a variety of desserts floating around. These included PB chocolate brownies, chocolate choc chip muffins, PB bars, and banana bread. We have pretty good appetites :)

Ladies Night Number 2

The gals and I make sure to have a ladies night every week. Last week was tacos and yahtzee, this was falafel, yahtzee, and some game I can't remember the name of. Next week is the arcade!!! No rules for ladies night, so watch out.

Tonight we got most of our grub from Haji-Baba in Tempe. Haji-Baba has vegan friendly food and goods. Half of the place has tables to sit down and eat, the other half is market style so you can pick up stuff to make yourself. We called in our order and it was ready in five minutes, woot!!

We played some yahtzee, lower scores than last week, and had some good talks as usual. Cookies were courtesy of Tara.

Bad Day?

Then come home to this. Nothing like chocolate chip cookies and some delicious vegan ice cream to forget about a crummy day. Not that I'm recommending eating your days away, but it's nice to treat yourself or someone else every once and a while :)
