Easy and Delicious

I'm not big on eating breakfast. In fact, I'd much rather have breakfast items for dinner. When I do eat in the mornings though I like to keep it kind of light. Today I had soy yogurt, fruit and some oatmeat squares. My favorite soy yogurt to eat and use in baking is Wholesoy. Not only does this make a good breakfast but also a good snack!

Happy Birthday Tressie!!

Tressie is one of my coworkers and another live-in employee here at Ironwood. Her birthday was last week. She always enjoys the treats I make for everyone here, so I decided to make her something I haven't made before, coffee crumb cakes!

They turned out delicious! The topping is a mixture of sugar, brown sugar, cinnamon, salt, melted butter and flour. When mixed by hand it becomes a crumble. It is sprinkled on top of the muffins and all are tossed in the oven for about 20 minutes. Now, I don't drink coffee, but I'm guessing these would be a delicious side to such a drink!

The Farm Sanctuary

I think I mentioned that The Vegan Oven had donated a gift certificate to the Farm Sanctuary auction a few months ago. The couple that had bid and won called me last month to redeem their goodies.

They couldn't decide on one type of dessert so they asked for an assortment of goodies. I decided to make them chocolate chip cookies, snickerdoodles, cupcakes, zucchini brownies and peanut butter swirl brownies. All together I gave them over 2 dozen goodies. I had leftovers and gave them to my coworkers, they didn't last the morning :)
